This is new position with the opportunity to build a team from the ground up. Focusing on frozen food service products, the Pastry Production Manager should have experience with GFSI or other food safety programs.

The Pastry Production Manager assists the Pastry Operations Manager in overseeing pastry production operations in support of Grand Central Bakery’s mission to serve our customers delicious, authentic food made from high quality local and sustainable ingredients. The Pastry Production Manager is directly responsible for all bakery operations during their shift including staffing, training, quality control, baker job performance, communication, inventory management, facilities and maintaining employee morale within the parameters of Grand Central’s mission and financial goals. Developing and mentoring skilled, passionate bakers who understand and uphold Grand Central Bakery’s quality specifications is a core responsibility. In the absence of the Pastry Operations Manager, the Pastry Production Manager is expected to cover their supervisor’s responsibilities to the best of their ability.

Salary: This position pays $62,727 annually.

Schedule: Full-time, expected schedule M-F from 4:00pm - 12:00am (midnight) Schedule flexibility and the ability to work weekends and holidays is required.

Qualifications and Skills:

• Must be at least 18 years old
• Ability to read, write, and speak English required; English/Spanish bilingual preferred.
• Maintains a valid Food Handler's Card at all times and follows health department regulations at all times.
• Knowledge of all health department regulations concerning food production and handling required.
• Must be able to add, subtract and multiply with ease and accuracy.
• Intermediate computer skills including use of Microsoft Outlook, Excel, Word, or comparable programs required. ERP experience preferred.
• 4 or more years’ experience in high volume artisan production environment.
• 2 or more years’ experience in management or leadership
• Knowledge of health department regulations for food production required.
• HACCP experience preferred.
• GFSI experience preferred
• Experience with and commitment to farm direct purchasing required.
• Experience with and commitment to farm direct purchasing, cost control, and maintaining vendor relationships.
• Experience with high-volume pastry equipment, and the ability to innovate.

Physical requirements include but are not limited to:

• The Commissary Pastry Production Manager is required to stand for up to 100% of the shift and may require lifting and carrying items up to 50 lbs.
• Procedures require a high-level of repetitive motion involving hands, wrists, arms and back.
• This position works in a building shared with production facilities is constantly exposed to wheat flour dust and other grain dusts (rye, corn, oat).
